Baked Sugar Cinnamon Donuts

Did you know the first Friday in June is National Donut Day!? That means that this past Friday was national donut day. Apparently donut stores like to give out free donuts on this day. Sounds like the perfect day to me!!

This is a recipe for baked donuts. I've seen lots of recipes that are for baked donuts that are based on cake recipes and require a donut pan. These are yeast based donuts and created the same way you would make traditional donuts, however they're then baked in the oven and not deep fried! I guess with that logic, you can eat more than one and not feel so guilty!

They do involve a bit of patience and require waiting for the dough to rise. Make them when you have time to wait and then if you're like me, and all your patience has been used up, quickly eat them all that same day.

You Will Need
For Donuts
1 Cup Milk
1 Tablespoon Butter, melted
2 1/2 Cups Plain Flour
1 1/2 Teaspoons Instant Dried Yeast
1/4 Cup Caster Sugar
1/2 Teaspoon Cinnamon

For Sugar Cinnamon Topping
50 Grams Butter, melted
1/2 Cup Caster Sugar
1 Teaspoon Cinnamon
Method
Place milk in a heatproof jug and microwave for 30 seconds until heated through. Do not boil. Stir in 1 tablespoon butter.
Sift flour into bowl. Stir in yeast, sugar and cinnamon.
Make a well in the centre and add milk mixture. Mix to form a soft dough, then turn out onto lightly floured surface.
Knead for 10 minutes until smooth and elastic.

Place dough into a lightly oiled bowl and cover with plastic wrap, then let sit for an hour in a warm place to double in size. While you're waiting for the dough to rise, line a baking tray with baking paper.

Using your fist, punch the dough down then turn out onto a lightly floured surface and knead until smooth. Gently roll dough out until approximately 2.5 cm thick. Cut out rounds from the dough, then use a smaller cutter to cut out the donut holes. Place on the prepared baking tray and cover again with lightly greased plastic wrap. Set in a warm place for 30 minutes to double in size.

While you're waiting for the donuts to rise, preheat the oven to 180 degrees celsius. Cook donuts for 12 minutes or until golden brown and cooked through. Combine the remaining sugar and cinnamon in a bowl. Brush the donuts with butter then dip in the sugar mixture. 


Don't forget that the holes can also be baked and dipped in cinnamon sugar! Bake them after you've finished baking the donuts - they won't take as long as the donuts.
